The existence of lactic acid after decomposition can promote the formation of nitroso myoglobin (redness of raw meat materials) and may protect the redness of meat-made products. Furthermore, this product has very strong moisture-absorbing power, which is helpful to its water-keeping property, and soft and tender properties. This product is very safe. Limits: the joint expert commission on food additives of FAO and WHO recognizes lactate and sodium lactate as unharmful elements. There are no highest-standard limits about the assimilating amount allowed per person and per day. As food additives, these products can be used according to the need of normal production.
