Glucan 1,4-alpha-maltohydrolase (EC 18.104.22.168, maltogenic alpha-amylase, 1,4-alpha-D-glucan alpha-maltohydrolase) is an enzyme with system name 4-alpha-D-glucan alpha-maltohydrolase. This enzyme catalyses the following chemical reaction:hydrolysis of (1->4)-alpha-D-glucosidic linkages in polysaccharides so as to remove successive alpha-maltose residues from the non-reducing ends of the chains. This enzyme acts on starch and related polysaccharides and oligosaccharides.
Specification:Enzyme Activity ,Powder is equal to or greater than 4,000U/g,powder form.
Characteristic:Amylase is obtained from submerged fermentation by Bacillus subtilis.
The optimal temperature:58degrees Celsius~60degrees Celsiu;
The optimal pH: 4.0~4.5.
Usage: It can hydrolyze starch to soluble dextrin and oligosaccharide, reduce the solution viscosity rapidly.It can be used in starch sugar industry, alcohol and brewing industry, bacteriophage industry and so on.
